Recipe: Chilled Cucumber Avocado Soup
(Makes 1 serving)
Enjoy this creamy concoction cold or with a fresh, green salad. It's a great "light" meal for a hot summer night.
- 1 large cucumber, peeled and chopped
- 1/2 medium avocado
- 1 medium serrano chili, seeded
- 6 oz. plain yogurt
- 2 tsp. fresh lemon juice
- 1/4 tsp. sea salt
- 1 cup ice cubes
- Place cucumber, avocado, serrano chili, yogurt, lemon juice, salt, and ice cubes in food processor.
- Process until smooth; serve immediately.
Cooking Time: 2 minutes
Total Time: 7 minutes
